Whipped Greek Yogurt
Now there is whipped yogurt you can buy at the grocery store, but it is always filled with so much added sugar I never would buy it even though it is amazing. So I had never thought of making it at home until I saw my friend Danielle from Project Meal Plan make Homemade Whipped Greek Yogurt and I thought it was the most brilliant thing ever.
So when my friends over at Barlean’s challenged me to make something with with their Seriously Delicious CBD Lemon Drop Hemp Oil, I instantly thought it would be the perfect match…
And guess what?

NOTE: Update in spring of 2023 Barlean’s appears to no longer carry the Lemon Drop Flavor of their CBD Hemp Oil. It was perfect in this recipe but alas we must move on...
Of course you can make this by leaving out the Lemon Drop CBD, it is still equally as delicious, I promise!

So how do you make Whipped Greek Yogurt?
It’s quite easy! For this recipe you will need a stand mixer or an electric handheld mixer, the mixer will do all the hard work and get the greek yogurt light and airy fast!
To make the lemon whipped greek yogurt you will start with one whole lemon.
Zest the lemon into bowl of stand mixer (or large bowl with handheld mixer).
Cut the lemon in half and juice half of the lemon into the bowl. The amount of juice should be roughly 2 tablespoons. Set aside other half for another use (make yourself a glass of ice cold lemon water).
Next add greek yogurt, honey, heavy whipping cream, and the lemon drop CBD into the stand mixer.
With whisk attachment start stand mixer on low for about 10 to 15 seconds to prevent too much splashing while the ingredients mix together.
Slowly turn mixer to medium-high level (8 on a kitchen-aid). Continue to whisk for several minutes until peaks start to form in the yogurt, aka until the yogurt is fluffy and airy.
Transfer your lemon whipped greek yogurt to bowls. Best served topped with a handful of fresh berries.

This Lemon Whipped Greek Yogurt is creamy, airy, and just plain delicious, the best form of greek yogurt is whipped. With simple ingredients this is a snack or dessert that is ready in no time!

1 lemon
1 cup greek yogurt
1 tablespoon honey
1/4 cup heavy whipping cream
Instructions

Add greek yogurt, honey, and heavy whipping cream into the stand mixer.

Yes, you can mix yogurt and citrus. Because yogurt is already acidic, added citrus won't make it curdle. That's just the short answer, though. Flavor-wise, adding acid to acid can make a dish too sour.

Take lukewarm milk in a bowl and squeeze out juice of half a lemon into the milk.Give a gentle stir and cover the bowl with a lid.Wrap it with a cotton cloth and set it aside for 12 hours. Wrapping the bowl with a cloth will keep the bowl warm for longer.

It is the quantity of the lemon juice that curdles the whey when the milk is separating. For this recipe, use use lemon skin (zested) and lemon juice to provide the lemon flavour but the actual lemon quantity in the recipe is not very high as to not curdle the yogurt.
An additive such as citric acid adds tartness, a seemingly unnecessary ingredient for a product that is naturally tart. But after all the other ingredients are added natural tartness often disappears.
All you need to do is add a few tablespoons of lemon juice or vinegar to the yogurt and stir it until the yogurt has thickened. The acid in the lemon juice or vinegar will cause the yogurt to thicken and separate, just like sour cream would.
